Friday, March 8, 2024
Healthy Fact of the Day: Grits are made from ground corn, which is a good source of fiber, vitamins, and minerals like iron, magnesium, and B vitamins. Combining grits with shrimp provides a balanced meal with protein, carbohydrates, and healthy fats. Now, let's dive into the recipe! |
|
| - 4 cups chicken or vegetable broth
- 1 cup stone-ground grits
- 1 lb shrimp, peeled and deveined
- 4 slices bacon, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/4 cup heavy cream
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
|
| | - In a saucepan, bring the broth to a boil over high heat.
- Slowly whisk in the grits and reduce heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until the grits are thick and creamy.
- While the grits are cooking, cook the diced bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet, reserving the bacon grease.
- In the same skillet with the bacon grease, sauté the shrimp and minced garlic for 2-3 minutes, or until the shrimp turns opaque and pink.
- Remove the shrimp from the skillet and set aside.
- Once the grits are cooked, stir in the shredded cheddar cheese and heavy cream until the cheese is melted and the mixture is smooth.
- Fold in the cooked shrimp and crispy bacon.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
