| Creamy Mushroom Soup with Herbs |

| - 1 lb (450g) assorted mushrooms (cremini, shiitake, button), sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- Salt and black pepper to taste
- 2 tablespoons all-purpose flour
- 1 cup milk (whole or 2%)
- 1/2 cup heavy cream
- Fresh parsley, chopped, for garnish

- Add sliced mushrooms to the pot and cook for 5-7 minutes until they release their moisture and start to brown.
